Wilted Cabbage Salad with Bacon

Ingredients:
½ lb trimmed cabbage, about 3 cups,
6 slices bacon
2 tablespoons vinegar
1/3 cup olive oil
2 teaspoons mustard
salt and pepper to taster

Directions:
• Shred cabbage coarsely. Cut bacon slices into narrow strips and cook over medium-low heat until crisp. Drain on paper bag.
• Whisk together oil, vinegar, mustard, salt and pepper until thoroughly mixed.
• Toss cabbage and bacon with dressing and serve
